    Perfect Pasta Salad:

    INGREDIENTS

    1 (1 lb) box tri-colored pasta
    2 cups chopped green peppers
    2 cups diced tomatoes
1 1⁄2 cups chopped red onions
1⁄2 lb cubed provolone cheese (optional)
    1⁄2 lb sliced pepperoni
    1⁄2 cup sliced black olives

    DRESSING

3⁄4 cup Pompeian extra virgin olive oil
3⁄4 cup Pompeian red wine vinegar (this brand is excellent in this dish)
    1⁄4 cup sugar
    1 tablespoon oregano
    1 teaspoon salt
    1⁄2 teaspoon pepper

    Directions

Mix together dressing first and set aside until sugar is dissolved completely.
Cook pasta according to box directions and rinse under cold water until cool.
Slice the sliced pepperoni circles in half and separate slices.
Mix together with pasta and chopped items, except the provolone cheese.
Pour dressing over it all and mix well.
    Chill well.
Add provolone cheese to salad before serving, otherwise it gets soggy.
You may have to add extra red wine vinegar or olive oil to get it to the desired consistency.

    Artichokes
I was cooking some up and my roommate had no idea what I was cooking. Aparently he's never seen one or even heard of 'em. I asked him if he wanted to try some, but he said it looked too weird and wouldn't touch it.

Artichokes are one of my favourite vegetables. I remember my boyfriend had the same reaction the first time he saw me cooking one!

I am eating a really good pasta with a Colombian twist - I basically just mixed ground sausage and macaroni noodles together and dumped a bunch of Aji (aka hot pepper) sauce on it. It is truly delicious

I finally tried the Sir Laurier d'Arthabaska cheese by DuVillage 1860. You're right, it's definitely better than the Lady Laurier, a deeper flavour. But I found the Maître Jules even better. If you ever see it, you should give it a try.

Another cheese I sampled was Belle-Mère by Médard from Saguenay-Lac-Saint-Jean. This may be my favourite of all the cheeses I've tried so far from Quebec. It's a washed rind semi-firm cheese, about medium strength. It was smooth with a nutty taste and had a bit of sweetness to it, like honey. I really liked the hint of sweet.

I got a bunch of fresh raspberries that I meant to make shortcake with, but I ended up just eating them all plain because hey were soooo good! I made banana bread with blueberries in it instead though and that was yummy too! I'll go get more raspberries tomorrow and make shortcake then.
