    Grilled up a 12 oz. ribeye, which I ate along with some cottage cheese and steamed broccoli.

    I love seafood so much, but I'm so afraid to do anything with it because I grew up in the middle of New York State... I live in Maine now and I think it's time to get over that... I can't drive 10 minutes without seeing someone hawking lobsters. The docks are like 15 minutes away from my house. I should be able to find some oysters that I can eat raw like that.

    I am trying to get rid of a nasty headache, so I made my meal early today.....and am eating it now.....a staple for me lately....this is lettuce, farm grown chemical free tomato, parsley, red onion, crumbly bleu cheese, garlic powder and balsamic vinegar.....when I am really hungry, I add a can of sardines in oilve oil to this mix, but today is no sardines.

    I'm eating a wrap made with the brown sugar balsamic pork loin, with some fermented cabbage rolled inside it.

    Got your baby carrots handy Expanse? Ok, let's begin. I tried a broccoli frittata for breakfast today. I was really good, though I still prefer the zucchini frittata.

    And for dinner I made Beer Bird. The beer makes a nice sticky sauce. You turn the chicken pieces a few times while cooking to coat them in the heavenly goo. The recipe called for Cornish game hens but I didn't have any (must have been held up with the caviar) so I made chicken thighs instead..Herbs and spices I used were salt and black pepper, rosemary, bay and juniper berries. And 2 heads of garlic! The kitchen smelled divine. Oh, and about 3 slices of bacon cut into one inch pieces for some smokiness. I had it with garlic-rosemary potatoes. The potatoes are actually Caribbean sweet potatoes. Sweet like orange sweet potatoes but they're white and don't have that distinct taste the orange ones do, but still with the sweetness. And a serving of fermented veggies.

    That looks delish I have never had that type of potato, I will have to look for those as they sound interesting. Did you make faces on your chicken thighs for a reason. The one on the left is making a duck face.......silly chicken. :)

    Today I got lazy and just ordered some greek food. I might make a lasagna tomorrow if I have enough time after work. I normally make my own pasta sheets for that, but I definitely won't have enough time, so I'll use predone ones.

    lol I didn't even notice, must have been subliminal. And he's wearing a bindi! The one on the right has a huge schnoz, and a goatee. This is more fun than cloud watching! We should get Asmo in here, he'd have a blast.

    The Caribbean sweet potatoes have the same shape as orange sweet potatoes but the skin is purple, so look for that.

    I made coconut clam chowder today, Potatoes, coconut milk, garlic, onion, clams, bacon ( or in this case Linguica sausage)
    and this time I added some certified Maine lobster juice I picked up at the supermarket.
    Oh, I added cream this time too. I normally use only coconut milk and butter but I was trying to stretch a single can of coconut milk where I would normally use two. It turned out really excellent! I enjoyed it with saltines and mozzarella cheese on the side.

    I got off work early so I decided I really would tackle that lasagna. I made a meat sauce, grilled a bunch of eggplant and zucchini slices and made a ricotta/kale/egg mix. Now I'm assembling it all with noodles and cheese. I can't wait until dinner! Lasagna is always a lot of work, but so worth it.

    That sounds so good. I've had lasagna with noodles, and eggplant lasagna where the eggplant replaces the noodles, but never both the noodles and eggplant together.

    No cooking today, I'm such a bad wife to you all. But don't despair! I'll be cooking again tomorrow. I bought eggplant today at the market, so it will be something with that. Today I heated leftover broccoli frittata from yesterday with a couple of pieces of kobassa and garlic rosemary potatoes from last night's dinner and that was breakfast. It went well together! Dinner was a tuna macaroni salad with fermented veggies mixed in eaten at the lake.
