    I love coconut rice I always keep a few cans of coconut milk on hand just for that!

    I made some olive oil, garlic, and Sazon rice to go with the left over meatloaf in pepper rings. I had some fermented cabbage and fermented turnips with it.


    Before bed, I'm going to put a pork roast in the crock pot. I have a special glaze for it tomorrow.

    Do you use Jasmine rice? I think that makes the best coconut rice.

    I made salmon patties but no pics because they weren't pretty, they were delicious though with beetroot relish.

    I cooked this overnight and I'm in the process of glazing it for the last hour now. I sneaked a taste. It's good!

    I am glazing mine in the crock pot like the original recipe called for so my glaze is not going to look as thick as the pic.

    Also, I didn't have sage so I put some curry powder instead.

    I had some fermented green beans as a salad, and ate baked sweet potato with the roast. Yumly!

    I am going to try those stuffed pepper rings tonight. This pork on is going to have to be mastered also soon. :)

    I poured the glaze into the crock pot and the longer it stays in the crock, the more the glaze is cooking down. It's going to be plenty thick.

    That looks delicious aerianne!

    I'm making a curry and orange veggies soup tonight. That means some sweet potato, some carrot and a butternut squash. I threw in almost a whole head of garlic, some onion, and a couple potatoes that were about to go off too. For seasoning I used yellow curry powder, coriander seeds, cumin, bay leaves, salt and pepper. When it's done cooking I'll blend it up with a can of coconut milk.

    This is my boxing chicken. I learned it from a Chinese friend at high school from her mum before she passed away. It's a tad complicated and messy but well worth it.

    Basically a fancier way of making fried chicken, more effort. You remove the meat from the bone but leave it attached at one end so the meat is basically inside out. Chicken is marinated before frying. I call it boxing chicken because the ends remind me of a boxing glove. :)

    This was served with broccoli and rice underneath, hoisin sauce.

    I am out of likes but I sure wish I was not. :(

    I made the stuffed peppers tonight and they were a hit. Thanks Aeri for the improvised ones and Broony for bringing it up in chat.

    The last 15 minutes I added more basil tomato sauce and cheese. Served them with herb parisienne potatoes done in the oven and corn.

    those drumlets look awful good but im more of a white meat only guy when it comes to chicken...sometimes ill buy a whole one and throw out the back half


    i still have lots chicken tenderloins (breast fillets) left from that last sale stockup and im tired of making fingers so tonight i cut some into chunks and wrapped bacon around them

    theyre still in the oven ..



    last minute idea to add some maple syrup ..damn it was good

    I had to make a quick breakfast today before flying out the door so I scrambled an egg with chopped onion and since I was craving mushrooms, I sliced a couple handfuls of cremini mushrooms and sautéed them in butter with garlic, tarragon and summer savoury. A cup of tea and I was out the door. And a mint to mask the garlic. lol

    Quick?! :) That would be an extraordinary breakfast to me.
    A quick breakfast for me is instant oatmeal, a banana, yorgurt, and milk.
