ive been cooking the same meal for a while now...stole the recipe from a youtube cooking show, who stole it from a California food truck Sweet potato cubed - 2cups -Heat in pan on low heat w/ oil or just water 10 mins later, Toss in some diced onion, chopped red pepper, chopped jalapenos and if possible fresh sweet corn off da cob (frozen will work) once this is ready crack 6 eggs on top, don't scramble put lid on pan and allow about 7 minutes and eggs should be poached like and rdy. enjoy I season with cayenne pepper, garlic or whatever looks good. You can wrap in in a tortilla too, just scramble the eggs. nutrition w/o torilla: serving: 1 cals: about 855 protein about 39 grams carbs about 70g fats about 30g

It was a lovely -9C here today so we fired up the BBQ and I made homemade chicken burger. I use Dijon and rosemary in them. All the fixings to go with them and I oven baked my own wedge potatoes with garlic and rosemary to go with them. It was good! View attachment 1114

I made a really good chicken noodle soup a couple of days ago - I seasoned the chicken with some tumeric, cumin, red pepper and then threw some kale and carrots in with lots of fresh thyme and parsley, cloves, salt salt salt and pepa here. And a bit of orange juice squeezed from an orange because I didn't have lemon and I think citrus balances the kale nicely. it was good
I made another spinach, strawberry and feta salad today, a big one. I tried poppy seeds instead of chia. I prefer it with the chia seed.
Another batch of fermented veggies today. I'm trying kohlrabi, kale and mini cucumbers. The kohlrabi and kale I made kimchi style with garlic and chili pepper, the cukes I used garlic and dill seed and dill leaves. kohlrabi red kale mini cucumbers chopping up the kale and bruising it with the mallet All ready to ferment!

Looks good Lucy!! Looking forward to hearing how they turn out! Tonight we had roast beef, baked potatoes, Yorkshire pudding, peppercorn gravy, cauliflower and left over cheese bechamel sauce. Finished off with a spinach salad. It was good and I am stuffed. View attachment 1118
