    My rheumatologist wants me to try 2-3 months without wheat or corn, so I'll be joining you in your experiment.

    Speaking of corn, I had corn on the cob for dinner. The variety was Champagne, it was delicious. We bought a mix of Champagne and Peaches and Cream at the farmer's market. Two cobs of corn and two Viennese sausages and cherry tomatoes with Italian dressing. It was so good, and quick!

    Yay corn on the cob! :D

    I planned to have some for tonight's supper, along with breaded fish, pan roasted kale and roasted potatoes. It's gonna be so good!

    I've got a lot of fresh tomatoes from the garden next door... and two bushels of apples to do something with. So I'll report later today on what I actually cook.

    Not yet, I'm going to start on the weekend after eating a bunch of my favourite foods for the (possibly) last time. Nachos tonight and pizza tomorrow, I think!

    nah, I dont want to completely shock my system lol.

    why do people even consider beans and rice harmful? I just havent really learned anything about either food to convince me its something I shouldn't eat.

    Beans and rice are carbs, just like corn and when I have done candida cleanses I have eliminated those as well.

    I eat them both now in moderation though.

    In any case, what I made today....

    the funny thing about this is I came on this thread to say I made a chicken and rice soup... only it was chicken, rice, beans (haha) and veggies like carrots and celery.

    I also made a stir fry side with pumpkin from a long neck pumpkin that I had cut up and froze last winter.

    Both were delicious. :)

    BBQ pork loin chops, grilled tomatoes, new baby taters drowning in butter and a spinach salad.

    Potatoes and corn on the cob are cooking, I prepared the breading mix for the fish that I'm about to pan fry (flour, salt, pepper and a bit of cajun spices) and a bunch of shredded kale leaves are waiting to be sautéed with olive oil, cumin and armenian pepper. Damn I love cold-season food! :D

    I didn't have much time to cook today so I slapped together a simple tartine for dinner. Piccolino tomatoes, a medium-sized pink tomato I picked up at the farmer's market and smoked Gouda on caraway rye bread. And a half of a custard and cream millefeuille. Fancy French meal. lol

    Nixtamalized just means it is treated in lime or other caustic soda, It's a way of processing corn that was discovered around 1500 bc, somewhere in coastal Guatemala!

    I started with 2 lbs of organic field corn. It was boiled in a solution of 1/4 cup lime and 3 quarts water for 20 minutes then sat for 8 hours.
    The corn was then rinsed and the skins or the corns 'precarp' that the lime partially dissolved is slipped off.

    Then I grind the moist 'pozole' in an old fashion hand grinder.

    Then I mix the ground 'Nixtamal' with butter and vegetable broth to make the masa

    Then I fill the corn husks with masa and the other fillings and steam for 4 hours

    Moderation is good, but carbs are also good btw. We're not trying to go into ketosis or something ;) We would like to see what cutting out refined carbs (especially grains) would change. I understood rice are considered some kind of grain as well so that's why they might come in. I noticed some critical remarks on beans (i think on here too, maybe by PR) but frankly I can't recall what they were exactly. I also understood brown beans (as we call them, i don't know the american/english name) are excellent for replacing meat in your diet (if one has the urge to cut that out). I'm not eager to cut out carbs like rice, beans and potatoes out of my diet and frankly also don't see the need. If someone sees it otherwise I am interested to hear so of course! :)

    right. I am not concerned with carbs so much as phytic acid found in grains (and i did a little research, it is also found in rice and beans but I'll get to that). Carbs in and of themselves are not bad. The body breaks carbs down into glucose which is stored by the body's cells until the glucose is needed to expend energy. Carbs are only bad if you live a sedentary lifestyle and don't burn them off, in which case all your body's cells eventually become full of glucose and the excess glucose is converted and stored as fat. I'm active so carbs dont really bother me.

    however, phytic acid commonly found in wheat and rye serves as an anti nutrient and leeches minerals from your bones and teeth. This is what I am really trying to remove from my diet. Phytic acid is found in beans and brown rice, however soaking beans for 12 or so hours removes most phytic acid from beans. White rice doesn't contain any phytic acid as it is only found in the brown encasing removed from white rice.
