I was really craving something sweet so I made myself the quickest peach cobbler ever! lol I made two pieces of toast, buttered them, put cinnamon and brown sugar on them (lots), and then I topped that with canned peaches and heated it all in the microwave! Awesome!

I made pizza. I buy a frozen Margherita pizza and add garlic, bell pepper, onion, and mushrooms that I saute; I also add some mozzarella.

Thursday I made my girlfriend a Jamaican Curry with Mushrooms, Peppers, Corn, Broccoli, and Zucchini over Quinoa. C/S, Rev J
I had leftover filling (ground beef and spices) from the stuffed peppers I made the other day so I had put it in the freezer. Today I took it out and browned it, added rice and cabbage, poured a bit of tomato juice over it all and made Lazy Cabbage Rolls. They turned out so good. Cabbage rolls fall apart half the time anyway. This method is a lot quicker and they taste the same. I steamed the cabbage for about 10 minutes beforehand. I don't like my rice too sticky so with the pre-steaming, I was able to cook the dish for 1-1/2 hours in the oven instead of 2 and the cabbage turned out soft enough.
I made the recipe below but did some things differently. It turned out really well. I omitted the seeds; added fresh garlic and fresh onion instead of dried/powdered; and cooked broccoli on top of it.
I pan-fried some wild salmon fillets which I had covered in lemon juice and Dunns fish seasoning. With that I had broccoli and asparagus risotto, which just came from a frozen packet.
I had indian Sambar curry with lemon flavoured rice, leeks, various peppers and some powderised lentils.
