Definitely eat them raw. You want all those rich enzymes that cooking kills. You can eat them in sandwiches or in salads, probably other uses I can't think of at the moment. I've never had them à la Pho, that sounds good too. You'd get at least some of the enzymes if it's a quick cook like that.

Chicken breasts breaded with cauliflower rice and parmesan cheese, scalloped potatoes and a green salad. Made an apple tart for dessert. I swear, I must have a tapeworm. Or be pregnant

I marinated a pork roast in honey bourbon overnight and brined a chicken for 24 hours in a salt, sugar, white wine and herb brine. Cooked the roast in the crock pot while I was at work and roasted the chicken in the oven when I got home. The chicken was too salty and the roast somehow dried out even though it looked like it was really fatty. I was super disappointed. Oh well. Back to the drawing board...
I had the Chicken and Acorn Squash casserole again, from a frozen meal from the last batch. Have you tried it yet? By the way, it's just as good from frozen. Especially with a fermented pickle!
