I was too busy to come online yesterday but I made a pizza from the pizza dough I froze the other day. It was fantastic! I just made a veggie pizza, tomatoes, red onion, roasted garlic, mushrooms, red bell pepper, and I shredded some Emmental cheese and sprinkled it over the toppings. It has a nutty taste like Swiss cheese but milder. After it was cooked I topped it with fermented peppers I have this great salt-free spice by Frontier Herbs called Pizza Spice that I used. It really does smell like pizza out of the jar. I'm not sure whether it was the spice or the fresh crust, but it was a really good pizza. I'm so happy I can have pizza again! Oh, by the way, DO NOT put wax paper around the dough when you freeze it. When the dough unfroze, it was stuck to the wax paper! So much for that brilliant idea. I wasted half the dough trying to get it off. I salvaged the other portions I froze because the wax paper peeled off fairly easy in the frozen state. I just added a bit of oil to the baggie, hopefully that will keep it from sticking to the bag when it unfreezes. Today I made apple crisp which also turned out really good, just the right amount of tartness. I bought too many apples at the farmer's market (they had Honey Crisp which I love), it was cheaper to buy the basket than just a few apples, so I decided on apple crisp today. It's so easy to make.
Your pizza sounds amazing lucy! I didnt cook today but i am drinking a tea I made to hopefully help my bronchitis. I made it with tumeric, cinammon, cloves, black pepper, a bay leaf, lemon, ginger and honey. And a little bit of butter because i'm out of milk and needed something with a high fat content to help my body absorb the tumeric. I actually think the butter gave it a really nice texture
That tea sounds good. The black pepper helps absorb the turmeric too. I've been taking a concoction of turmeric, black pepper, cayenne and a teaspoon of coconut oil in a bit of water a couple of times a day for an infection I'm trying to keep at bay. Maybe I'll make a tea out of it instead with some cinnamon, cloves and honey. I just bought this great local raw wildflower honey. I have to stop myself from eating it out of the jar, it's so good.
I roasted a bunch of garlic today (the house smelled heavenly) to freeze for future meals and recipes, and I made bumbleberry upsidedown pie today. It's like a cobbler but you put pieces of pie crust on top instead of biscuit batter. It was really good with a bit of heavy cream.
I've got a duck in the oven for Thanksgiving (today, here in Canada). The aroma is driving me nuts! The garlic and thyme springs smell great. I'll make steamed potatoes with butter and fresh dill to go with it.

I made the slow cooker lasagna again, but this time with broccoli. It was really good! I highly recommend trying it. I was afraid the broccoli might turn out mushy, but it had some crunch to it, which is the way I prefer cooked broccoli.I ran out of mushrooms and even without them it was really good. I used the same amended recipe I used the first time, with regular noodles, puréed tomatoes, and added fresh sliced tomatoes, broccoli with ricotta and for the shredded cheese I used a medium havarti, and for the top I shredded some of this great applewood smoked cheddar I love. With the recipe being salt free except for the cheese, the smoked cheese added some much needed flavour. I'll definitely use it again. One of the ricotta with broccoli layers: And the finished product: By the way, I tried another batch before this one a couple of weeks ago that was a bust. I used tomato sauce instead of puréed tomatoes and I think it needs the extra moisture of the wetter puréed tomatoes. I also cooked it on low for 6 hours and it turned out very mushy. I'll stick to the 3 hours on high. I also tried avocado instead of the spinach and didn't find it tasted good. I've tried avocado in cooked meals a few times and each time I didn't care for the taste. I'll stick to cold avocado. It's okay with a hot meal, like with chili, but not cooking the avocado itself.
I tried a new recipe today, Chicken and Acorn Squash Casserole. It also has sweet onions, apples and cranberries in it and drizzled with maple syrup. It was fantastic! The combo of flavours complemented each other amazingly well.
I cooked a ham in cola and brown sugar. I'm having a sweet potato with butter and cinnamon along with the ham.
Here's the recipe. You have to try it. Low on prep time and absolutely delicious. That green you see on the chicken is the sage that you stuff under the skin. The sage was one of the great tastes in the dish. Sage can be strong but it was muted by the wonderful fusion of flavours in this dish. I used smoked paprika instead of salt. It's such a flavourful meal you don't even need salt.
