You can't really mess up meatloaf, in my opinion! I think I'll throw a ham bone, with lots of ham still on it, in the crock pot with some white beans before I go to bed. It'll be good to have tomorrow.
I had to look up opera cake. That must have been a big job! Looks like something I'd like. One of my favourites is Napoleon torte. Takes forever to make but oh so worth it. My friend's mum used to make it. I always made sure to visit. :-D
It was definitely a big job. My dad did a lot of it before I went over though ha! Very worth it. It think we will look for a different recipe next time since we weren't in love with the sponge cake layer, but it was more a texture issue than flavour.
Yesterday I made squash, onion and split pea soup. I didn't let it cool before blending it up, and it expanded in the blender and flew out the top and all over my kitchen. Luckily, I had lots more soup to blend. I was scared to blend the rest of it though, because of the initial explosion and subsequent mess it made. My husband, bless him, blended the rest of the soup for me. Upon completion of the blending, he said "baby, this soup is so thick and full of nutrients, it is guaranteed to get us through an apocalypse."
I had an eggplant I needed to use before it went bad so I just dipped it in some flour and crumbles feta cheese (the cheese comes from a local dairy farm and it is amazing) fried it for a few minutes until it was golden brown, then layered with tomatoes and topped with provolone cheese (mozzarella would have worked better but I didn't have any) then baked for like 25 min. Anyone know any good eggplant recipes? I love eggplant but I usually end up doing that, or moussaka. I need moar eggplant
Potato soup. After we ate I told my daughter I wanted something sweet....she said we have a lot of fruit, eat fruit. When the heck did this relationship turn around? Fruit is a fine dessert...if it's in pie.

Salt and pepper then oil each slice with olive oil. Cook one side for 20 minutes at 192C (375F) then flip over and sprinkle smoked paprika on the other side. Oil the opposite side and bake for another 20 minutes. For the last 5 minutes, add gouda cheese and top with thinly sliced tomatoes. Sprinkle with parmesan or romano and bake until the cheese is melted, about another 5 minutes. Take out of oven and add fresh basil sprigs.
Today I made kinda cheater pho soup! The broth was premade, but I made noodles and veggies and all the other add ins and we sliced some pork extra thin and threw it all in the broth after we heated it up. It was yummy.
I don't cook every day. I'm still eating ham and beans, mac and cheese, fermented cabbage, and corn muffins.
Today I cooked that chunk of beef heart I got the other day. I cut it in strips then marinated it in balsamic, olive oil and rosemary. I just pan fried it for a couple of minutes on each side so it was still very rare inside. I made baked potatoes to go with them and last minute my boyfriend decided to put some leftover cream cheese jalapeño mixture in them. It didnt really go with the balsamic beef but who cares. I actually really like beef heart. I want to find a good butcher to get a whole one from next, to do a roast with.
I think I'm going to make muffins first thing tomorrow. I didn't cook today though, I just ate leftovers and some tasty cheese.
I did make muffins! I made peanut butter chocolate oatmeal muffins. I'm also cooking some coconut rice right now for a stir fry later.
I just coated bacon in jerk seasoning and put it in the oven at 200 degrees. In about an hour and a half I'm going to flip it and cook it for another hour and a half. Then I plan on doing more. When I'm done I'm thinking of using it in baked Mac and Cheese. C/S, Rev J
I just made an extra yummy veggie stir fry. I recently got dried shrimp and I tossed some of those into the sauce, which was really good!
I have a great big pot of Apocalypse Soup on the stove. I'll be sure to remember to chill it this time, before blending it all up.
I've got my new to me, "extra large" oven, going with 3 meatloafs inside and a big pot of chicken on top. Part of the chicken is for our sickly cat and part of it will be turned into bbq for us.
