I am not sure I would do the pineapple but the beet root sounds interesting and I could see the flavours going well together. Thinking on it more the pineapple would probably compliment the beets. I just may try this.......kids are going to think I am nuts.
Awesome! I bought a big pile of apple seconds at an orchard yesterday and wanted to do applesauce with them. I am going to try this method.
It's good. Since you are essentially roasting the apples, the flavor is condensing. No sugar is needed.
I made a pork loin roast seasoned with lemon pepper and oregano cooked in apple cider with baby carrots and the Caribbean sweet potatoes that Lucy had tried. They were good and more dense than yams. I could see them being in a boiled dinner or stew as they would hold better than yams or conventional potatoes. Also did acorn squash with butter, brown sugar and cinnamon and a lemon dill gravy to finish off. It was good. Prep Yum
I am going to try doing it that way. I love applesauce but find if you are not constantly at it, it can scorch really easily. Thanks Aeri for the idea.

I made goulash and spätzle today. I've made goulash before but this was my first time making spätzle.The combo was great.I ate half a bowl and I was stuffed. It was really filling! No pic, I didn't have my phone with me.
I re-heated the Cheesy Hamburger Tater Tot Casserole, adding more sour cream. That didn't quite fix it for me. It was supposed to have cream of mushroom soup in it.
I was going to ask Aerianne how they turned out. I'll have to try it too. You're right about things not scorching in a slow cooker. I made the caramelized onions and they turned out fantastic.
Ha ha... but were they baby carrots? ETA: I just noticed that they were baby carrots. Poor Expanse will never sleep again and get fired for handing in wet assignments!
I had a cooking disaster today. I picked up something called digby chicks herring the other day on a whim, but had no idea what to do with it. It is smoked, salted herring fillets and the internet didn't have many suggestions. It was really salty so I decided to soak it for a while. While it was soaking I decided on a simple fish chowder. I tasted a tiny corner of one of the filets and it seemed like enough salt had soaked out so I chopped them up and added them to the soup. I tasted it a few minutes later and it was sooooooo salty! I couldn't eat it, I had to throw it out. I guess I didn't soak the fish nearly long enough. At Least I learned something from this disaster.
That is too bad about the salt. The next time if something is too salty try throwing a couple of raw potatoes in as the salt will bind to the starch. Once the potato is cooked, you can discard it. I have done this and it has saved the dish and made it edible.
