I will have to dig up my vegan sushi recipes... but it's really easy to make vegan sushi rolls at home - I make some with sprouts instead of rice, and some with tortillas and black soybean paste along with the nori rolls so they're like a double-decker sushi roll. I like carrots, cucumber, avacado, and red pepper cut in long thin strips for the center of the roll. The secret in getting the sushi taste is using roasted sesame oil and pickled ginger for flavoring.
