    I'm a vegan and I don't find anything to hard about being one, there are plenty of animal free products I can use in replacement of meat.

    For MiniBix:

    Vegetarian chili con carne

    Yield: 8 Servings

    Ingredients:

    * 1 1/4 c Kidney beans
    * 1 md Onion; chopped
    * 2 Cl Garlic; crushed
    * 1 1/4 c Carrots; chopped fine
    * 1 1/4 c Green beans; chopped
    * 1/2 c Combined red and green peppers
    * 1/4 c Water
    * 1/2 ts Chili powder
    * 1/2 ts Cumin
    * 1 15 oz can stewed tomatoes
    * 1/4 c Tomato paste

    Instructions:
    Preparation Time: 0:15 Preheat oven at 350. Place onion garlic carrot green beans and peppers in a casserole dish. Add water chili powder cumin tomatoes and tomato paste to mixture. Bake for 20 to 30 minutes.

    Enjoy :)
