Do you know why we buy it? This is going to shock some of you: we buy ready-to-eat soup packaged in metal cylinders because of the variety. Get up off the floor now and continue reading. There are so many different flavors of soup available to persons who can shop in industrialized countries that making soup at home, from scratch, would cost you a massive amount of money for the ingredients. You would have to be rich to afford the materials that could allow you to make so many different kinds of soup. Frankly, we like the many choices even if we only choose a relative few. It makes us feel modern, maybe even sophisticated. You get all of this for a mere $2.50 (USD). And, if you're Indian you can haggle and get it for $2.00!
Made a rather delicious lentil soup last night...with various veggies and seasonings in it. Very easy, and I made enough to freeze for another time too...
I cook freaking fantastic soups. That being said, I don't always cook, especially not when I'm on the road. Cooking for yourself is kinda expensive, boring, and time consuming. If you have people around, makes sense.
one can always put produce and mayo between bread, as a diversity when tired of soups and even heating anything. lots of quick and easy things to eat. soups just quick and easy to cook, and better then anything fried. of course a micro-wave can completely replace frying anything anyway. wrap a wad of hamburger, seasoned to taste, in a sheet of nori, and zap. 30 to 45 seconds, unless there's really a lot of it. not everything ready to zap, or eat as it is, is expensive either. some of it actually cheaper then canned stuff. which may be why canned stuff is getting the expensiveness of rarity. with falling demand for it.
When I cook vegetables or potatoes or other I use the resulting liquid to make soup. I never throw away water I used for cooking. That would be a stupid waste.
