to keep this simple - your body doesn't stop "burning calories" at all. it will slow down a bit when your at rest. it continues to break down/build up all the time at the cellular level. you're body will go through either carbs or fat...possibly protein for the glucose it needs - however.. in the absence of carbs, your liver will break down fat into ketones, which allows the body to not breakdown protein. after a while, if you stay with restricting your carbs, your brain will adapt to using the ketones for fuel
