An invasive vine.... It grows faster than you could possibly eat it too.

Kudzu was introduced from Japan into the United States in 1876 at the Philadelphia Centennial Exposition, where it was promoted as a forage crop and an ornamental plant.

saw the thread title and came in to put a random fact about me and got totally sidetracked when i read the posts about this kudzu. thats one hell of a triffid! edible huh? so what does it taste of? can you eat it raw or do you have to cook it?
and we thought we have problems in cornwall with the knotweed that also came in as an ornamental plant, but that kudzus got the edge on that, what a monster!

I haven't tried it but I read this: "the leaves have a flavor similar to that of a green bean. That's because Kudzu is a member of the legume. family."

There are recipes for Kudzu Blossom Jelly, Rolled Kudzu Leaves, Kudzu Quiche, Kudzu Tea, and Deep Fried Kudzu Leaves.

sounds interesting, so why aren't more people harvesting and using it? free food! or are they?
for such an invasive plant surely some good could come from it?

that pic of the sand dunes is NOT kudzu.. google the url and it is actually "beach vitex"

kudzu was originally thought to be good for erosion control, but that is actually not the case.
