    I'll fix up some Vegan Squash Soup for the evening.

    Butternut Squash Soup with Spinach and Mushrooms
    1 medium butternut squash, peeled, seeded, and chopped
    2 cups mushrooms, chopped
    1 Vidalia onion, diced
    3 cloves garlic, minced
    1 quart vegetable broth
    olive oil
    Several handfuls of fresh spinach
    Salt and Pepper to taste
    Peel squash and cut in half lengthwise. Remove seeds and chop into small cubes. The smaller you chop, the faster it will cook. Sauté onions and mushrooms in olive oil. Set aside. Sauté butternut squash and garlic until soft. Add vegetable broth and bring soup to a simmer. Remove from heat and use an immersion blender to cream the soup. Blend until completely smooth.     And....Some Black Bean Burgers

    Black Bean Burger + Balsamic Onion Jam
    As fancy as it sounds, this recipe is super simple—it only requires throwing seven ingredients into a food processor and hitting "pulse."

    What you'll need:
    1 1/2 cups canned no-salt-added black beans, rinsed and drained
    1/2 yellow bell pepper, sliced
    1/3 cup roughly chopped red onion
    3/4 cup shredded carrot
    1/3 cup dry quick-cooking oats
    2 1/2 tsp canola oil
    1/2 tsp cumin

    How to make it:
    1. Put all ingredients in a food processor and pulse until combined, 2 to 3 minutes. Form into 4 patties.

    2. Mist a piece of aluminum foil with cooking spray and place foil on the grill. Cook patties on foil for 5 minutes, flip, then cook 5 minutes more.

    3. To serve, top each patty with 3 tablespoons Balsamic Onion Jam (recipe: Healthy Burger Toppings).

    Makes 4 servings. Per serving: 170 cal, 5.5 g fat (0 g sat), 25 g carbs, 70 mg sodium, 6g fiber, 7g protein

    I love the pic of the duckies in the canoe. Fantastic pic of the boats and foliage, Hotwater. All the pics are great!

    How about a wacky sunset. I've been playing around with the camera's special effects. This one is called HDR Painting. Taken just after the sun set.
