    1. Take one celeriac, roughtly chop it into 1cm cubes and put in a large saucepan

    2. Add two pints of stock, bring to the boil, and then simmer for half an hour

    3. Meanwhile, chop one onion and fry it in butter and oil until soft

    4. Drain the celeriac, reserving the stock, and run the celeriac and onions through a mouli or food blender

    5. Return the celeriac and onions to the pan, put it over a low heat, and gradually recombine the stock

    6. Simmer gently for another 10 - 15 minutes

    7. Season to taste

    Good soups are easy, and so much tastier! It's not soup snobbery.
