My personal belief was that a hot material cooling quickly would be able to form a lattice crystal lattice more rapidly. Because the mean speed is higher the molecules would be able to move into place faster but of course this doesnt really work when you think about it. It really does seem to be a detailed probelm.
I know the effects of humitidity/container and speed have all been studied. The exact rates vary but it still hold true warm ice cream cools faster. I cant remember how many liquid this is true for but it is certainly true in liquids as simle as water. When I first heard this in a lecture, the first thing I thought of was a possible Mesophase in Ice Cream though when water came up this clearly couldnt be true. Many subtle feautres such as (Evaporation, Dissolved Gas, Convection and general surroundings) have been tested although no theoretical basis has been found many people still assume one/all of these to be the cause. I found this quote from Aristotle 'The fact that water has previously been warmed contributes to its freezing quickly; for so it cools sooner. Hence many people, when they want to cool hot water quickly, begin by putting it in the sun. . ', showing that this effect was known long before Newtons Law of cooling. While this may be an interesting aside the far more important part (and indeed the theme of the lecture) is about scientific thinking. The effect found its way into modern science from a Tanzanean high school student who saw ice cream makers doing it, tried it himself and then asked his science teacher why it should be true. His high school teacher said he was 'mistaken' or words to that effect. Eventually he managed to ask a Uiversity lecturer who was visting the area, despite being sceptical he said he'd try it himself. After doing a couple of runs and seeing it himself he asked his lab staff to repeat it. They to saw the effect and effectively said 'we'll keep trying till we get the right answer' a classic. Anyway he brought it to worldwide attention at which point ice crem makers said 'yeah we know' and then various historical refernce started to emerge.
