    i love to cook. and rice cooked in coconut milk is fucking amazing. i make a SPICY jamaican red beans and coconut rice, with fresh green onions sprinkled on top... yummy.

    no, i've never made samosas... but now i'll have to. :)

    it's really yummy. i don't really have a recipe... did once upon a time, but all my recipe's got left behind in the move by accident. :mad:

    but it's something like this. bag of red beans, all soaked and whatnot (i like to put em in a pan with water, boil for half an hour, and put in the fridge overnight... they get much softer this way). remove the beans from the pan and drain them.

    put enough oil (olive, or canola works fine too, i prefer peanut) on the bottom of the pan to cover it well, and turn on medium while finely dicing a large onion, and 6 decent sized garlic cloves, pressed. add these to the oil and cook until translucent. add the beans in. and enough water to cover them, with about an inch or so of water floating on top. then i add about a tablespoon or so of jamaican allspice, 1/2 tsp. cayenne (although my cayenne is so hot i just add a couple dashes), 1/2 tsp. black pepper, and 2 tsp. chili powder. if you have issues with spicy foods, start with small amounts of each of these spices and add until it's hot enough for your taste. i have accidentally gotten this recipe rip your face off hot before, and it's been too hot for us to eat, lol!

    simmer all this for a while, then add 1/4 can of coconut milk. use the rest of the coconut milk to cook with jasmine rice. i usually do about 3 cups of rice.

    i usually cook the beans for 2+ hours to get the seasonings nice and soaked in.

    slice up some young green onions/scallions, and sprinkle these on top when you serve. it's divine.

    that much coconut milk will make you shit for a week, but it's amazing. oh, and this makes enough to feed a small army. :)

    cool cool. :) i do a mean cuban black beans and rice too. :D i make a lot of beans and rice. and lentils.

    lol... it's hard to share recipes though, cause i don't really cook with them. i just throw things together, and i never can remember what i put in them when i'm telling people about it, lol!

    hmmmm... i think i might put a little cumin in the red beans... i can't remember. if you make it and it tastes like it could use something, cumin might be it. :D

    I am addicted to huge portians (like 6 slices on top of each other) low GI white bread with either butter or cheese on it and some ham if there is and shuved into the microwave (turning it over halfway through, so that it doesn't get too soggy) until it is HOT, and then I bundle the whole thing up and eat about 2 slices of bread and 3 slices of cheese per bite, it is delicious.

    I actually only ate it for the first time over the summer. I was out to eat and the menu said 'Grilled Cheese, -Add Tomato, -Add Spinach'.. so I got both just because.... I guess it's more like a grilled sammich instead of a 'grilled cheese' but it's still tasty :)

    Mm, I make a similar variant.. I use cheddar & mozarella, then I add pesto & spinach and fresh basil.

    Tis yummy. Suppose you could add tomatoes but I hate em so there's no point..
