marshmallows are easy to make....way better than the store ones

 

You know what I like?

I like baking meringue. I really dislike store bought whipped topping on something that was originally supposed to have meringue on it.

 

mmmmmm meringue....I have too many egss atm....just maybe

ive tried dozens of times to bake my moms meringue cookies but never been able to duplicate the chewiness ....always turn out too hard....specially after they cool

I saw one recipe said heat the oven to 350 and turn it off and cook the meringue in the just turned off oven

for 24 hours....that sounded crazy but at this point I will try anything

Exactly! I never actually ate the marshmallow after I roasted it.

 

i like my marshmallows roasted golden brown. i will still eat them if the catch fire, but i prefer them ooey gooey and tan on the outside.

we are trying to navigate finding a car, and the financing for it. this would be easier with me working, but no one is hiring me 9 months pregnant, i really have to wait until after. i told hubby that he "resinated" the car like a pipe by just topping off the oil to get by. if my mechanic says to get the oil changed at x months or miles, you better believe i will do that. i dont feel bad giving them our money. as it is, they changed the oil, charged us the least amount (instead of an arm and a leg for all the work needed to get it to 100%) and gave us the sound advice to trade it in before it loses any more value. he really could have taken better care of it, even though a lot of factors were out of his control (mountain driving, hot/ cold temperature changes, etc) when im driving and working i will likely be showing him up.
great news is that the mechanic has a sign in the window that they can no longer accept walk-ins, because they are too busy! that makes me really happy. they are such great folks. if hubby knew more/ was more into cars he could work there easy. its nice to have a good trustworthy mechanic. actually bumped into my dad there as we were leaving, he had to get the brake lights on his new car checked out.

so we are trying to figure out how much to ask the bank for pre-approval. we just put $20K worth of solar panels on the roof, so thats a very recent "ding" to the credit. but if we can keep the loan payment around/ under $200/ month we will be ok, because we have just one more payment that size before the holiday loan is paid off in full. and then once im working it will be a-ok, and we will get things paid down a lot faster. next up: getting the mortgage payment earned, before its overdue. everybody send "big money" vibes to hubby, he is serving drinks to poker players today, and they are not the best tippers.

 

my mechanic is a vietnam vet, hes getting up there now and its come the time to find another reliable one. Id hate to take my car to someone else cause hes the guy that sold me the car in the first place. hope he stick around least the life of this car.

I should never look through the discount/marked down plants at a nursery or in this case a garden center. Found some nice "cosmetically challenged" stuff that I couldn't afford. Eh... I'm doing major landscaping I shouldn't be doing either, so what the hey...



I got new blades, again, for the MTD and got the entryway and one side of the driveway mowed... Should get the rest done tomorrow if the rain holds off until Friday. Front rims for the Cub Cadet should be here tomorrow, too... I'll probably paint them before I mount the tires. Depends on what they look like, and/or if I decide to change colors, I doubt this thing's going to look like a Cub Cadet when I get done with it.

construction left these rolls of weedblocker, cut me off a whole bunch of that for the front and back the house, under the porch and stuff. front never really grows anything under there, but the back .. its a jungle, got that much under control now. but not the way I really want it.
