    Italian food and Italian guys :D Heaven.

    I LOVE to cook, and I don't care who knows it. Alot of people pick on the fact that a guy shouldn't cook, but that's rediculous. It's 2008. First of all, the guy that doesn't cook, is the guy that will have to settle for takeout while I'm eating my lasagna and stuffed shells. :biggrin:

    And second, there's nothing more romantic than cooking a special dinner for (or with) someone special. Mmmm, it gets me going just thinking about it. :)

    INGREDIENTS


    • 2 cups milk
    • 1 cup heavy cream
    • 4 egg yolks
    • 1/2 cup sugar
    DIRECTIONS


    1. In a medium saucepan, mix milk and cream. Warm until foam forms around the edges. Remove from heat.
    2. In a large bowl, beat the egg yolks and sugar until frothy. Gradually pour the warm milk into the egg yolks, whisking constantly. Return mixture to saucepan; cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately.
    3. Pour the mixture through a sieve or fine strainer into a bowl. Cover, and chill for several hours or overnight.
    4. Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency.

    Baked Ziti

    1 pound dried ziti pasta
    Kosher salt
    3 1/2 cups Quick Tomato Sauce, recipe follows
    1 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced
    3/4 cup freshly grated Parmesan, divided
    1/2 teaspoon freshly ground black pepper
    Pinch red pepper flakes

    Preheat the oven to 400 degrees F.Bring a large pot of water to a boil, salt generously, and boil the pasta until al dente, tender but still slightly firm. Drain.


    Toss the cooked pasta with the marinara sauce, cubed mozzarella, half the Parmesan cheese, black pepper, and pepper flakes. Transfer the pasta to an oiled 9 by 13-inch baking dish.



    Cover the top of the pasta with the sliced mozzarella, and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. Serve immediately.

    Quick Tomato Sauce:

    2 tablespoons extra-virgin olive oil
    1 pound sweet and or spicy Italian sausages, casing removed and crumbled
    1/4 medium onion, diced (about 3 tablespoons)
    3 cloves garlic, chopped
    3 1/2 cups whole, peeled, canned tomatoes in puree, (one 28-ounce can), roughly chopped
    Sprig fresh thyme
    Sprig fresh basil
    2 teaspoons kosher salt
    Freshly ground black pepper

    Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.

    Remove and discard the herb sprigs. Stir in the salt and season with pepper, to taste.

    I make a cheese sauce with parmeasan, fontina, swiss, cheddar, and provolone (milk to make it saucy) usually myself, make my own tomato sauce (bake tomatoes submerged in olive oil along with onions and garlic, strain of olive oil, reserve, cook the tomatoes, onions, and garlic until they break down) and integrate that into the ziti.

    YOu know what?! I have to say something here. Italian is the easiest shit to cook. Buy some Ragu sauce, brown some meat either sausages or ground beef... chicken whathaveyou, throw in some cheese depending on the recipie whatever kind you need, and some weirdly shaped pasta ... GARLIC and

    VOILA you can't go wrong with fricking Italian food.
    Have a ceasar salad and some Panini buns and there you fucking go!

    I go to a french restaraunt here in town and I always have Billy-bis (mussles)

    this is my food here

    this one might be the white wine and leeks... unfortunately the mussles were minute.

    I like escargots as well ... sushi, crab, smoked oysters, crab, smoked salmon and cream cheese, crab, lobster, crab, you name it...
