Would anyone like to take a stab at my cooking question?

    So, I'm roasting a pork butt in my oven, and I was hoping to also throw in some vegetables while it's cooking, since the roast isn't that big and I could fit another dish in there beside it. I'd like to cook some carrots and onions. The oven is at 325 for the next 4 hours, and at the 3 hour mark I have to open it up and remove the foil from my roast. Is an hour enough time for the carrots and onions to cook, and will it affect the roast cook-time?

    Add some small cut potatoes too.. parsnips etc, will all roast well.

    Yep I think an hour should be perfect and it shouldnt affect the cooking time

    Cover them in Foil first and then when you think your pork is ready, uncover them to crisp them up nicely.

    Is the temperature a little high or is that the temp you've cooked roasted butt before. Most people use around 200 degree range to slow cook it.

    Add some butter to those veggies and potatoes in the foil

    This is the first time I've cooked one in my oven, I usually do it in the slow cooker. I just went with a recipe I found online. I'll let you know how it turns out.

    Everything turned out perfectly! After the hour was up I took the foil off of the vegetables and broiled them for about 10 minutes, they were crisp and soft inside. The pork fell apart, and was especially tasty with some 75 sauce.

    Oh my goodness, that looked sooo good! Thank you for sharing that recipe. I knew there was some garlic, but man, only a teaspoon? I love garlic in everything:)

    u could of added them sooner and scoop them out if they were to tender or over cooked. one hour plenty of time in roast pot . but im a stick a fork in it kinda person. .

    I know it's too late, but I woulda cooked them with the pork--in the actual juices; not in a separate dish.

    I like a lot of garlic too, but the ratio was pretty good.
