Main dish, side dish, etc. We have guests from Oregon this weekend (wife's relation) and this evening I'm going to grill/bbq a tri-tip. It's a popular meal out west and is slowly becoming more popular here in the upper Midwest. Coals, hickory wood grilled low & slow! Will be delish!!!
My mate made us cottage pie; her potatoes are made with skin-on red potatoes, cabbage, turnips, leeks, garlic, and a bunch of herbs. She doesn't whip them into the texture of baby food, but mashes them by hand, leaving them a bit chunky. You can't tell by the pic, but that deep fryer's about 4" deep. This one is special; one of her very rare ones made with meat, with lots of onions & garlic (usually she makes a vegetarian concoction of red lentils). Altogether awesome; one of my favorites.
Having my M-I-L over for dinner tonight and her favorite meal is tri-tip. So I'll be smoking/grilling a couple of the smaller ones we have this evening. Our veggie will be prosciutto & cream cheese wrapped asparagus. Garlic cheesy French bread to round out the meal.
Yesterday I made chicken grilled cheese using homemade sourdough bread. 1st I seasoned the chicken with flour, pepper, and Cajun seasoning. Fried in grapeseed oil in my cast iron skillet. Made homemade garlic butter while the chicken was cooking. Once all done. Poured the garlic butter on the bread. Placed them in a separate frying pan. Topped with room temp dry fresh mozzarella cheese and the chicken. Whatever was left of the garlic butter. Poured it in the cast iron and cooked up asparagus. Me and the wife both enjoyed it very well.
