I made those mint chocolate chip cookies today! They turned out delicious, but next time I will double the mint added. I just used a basic chocolate chip cookie recipe and added a bunch of fresh mint, chopped very fine.
I've got two good proportioned cuts of steak, veges, some crinkle cut chips and calamari to cook up for supper soon.
Yesterday I made kimchi fried rice with a bunch of other veggies and tofu in it. Today I was unhealthy and lazy. I had leftovers for lunch and then got a poutine for dinner.
I just used the half jar that I was worried about. It hadn't fermented long enough anyways but everything kept floating up and I was worried about it molding, so I just threw it into dinner. I still have another jar frmenting away.
I will try this next time. I used a little mustard jar this time, but the mouth of the big mason jar is smaller than the actual jar, so when I put the little one in, it didn't keep it all down.
Corn on the cob (tis the season!), ready to be salted and buttered, and European sausages for dinner. With a side of fermented veggies.
I made a no cook jam today that's made with chia seeds. Was it ever good! And so easy to make. I only made a bit to try it out. I used raspberries. I'd like to try peaches too. I'll have to pick some up at the farmer's stand this week. Here's the recipe if anyone is interested: [SIZE=11pt]No Cook Jam[/SIZE] 1 cup raspberries (or any fruit) 1 Tbsp maple syrup 1 Tbsp chia seeds 1 tsp water - Mash or use blender to purée raspberries. - Mix in maple syrup. - Add chia seeds and water and mix well. - Pour mixture into glass container or jam jar. - Put container in fridge or let rest on counter for 1/2 hour (chia seeds will form a gel and thicken the "jam").
Today is my "cheat day" so I had some pasta for lunch, and I am going to have some fancy cheese tonight at my art club meeting.
We made breakfast chilaquiles this morning. I think for dinner I will keep it simple and make spaghetti with some crusty bread. No bottled sauce...that is sacrilegious.
Before I get into what im cooking today i just wanted to share how ive been buying produce. Im not sure where else to putthis, but presumably if you are cooking you must buy the ingredients for it. I've been going to a new grocery store lately that has a whole section of huge bags filled with random produce that isnt fit to be on the shelves. This means it's either blemished, about to go bad, or way too under ripe. Each of these bags is several pounds of produce for 2-3 bucks. This is my new favourite way to shop, it is so cheap! On my last trip there I got a few pounds of Chinese eggplant, a big bag of onions and garlic, a bag of chayotes, a bag of under ripe mangoes, several pounds of cucumbers and a bag with three fennel bulbs in it, all for about 15$! It would have cost me twice as much to get all that anywhere else. I use the things that are about to go bad the same day, by blanching and freezing most of it. I have also recently been using a lot of this stuff in fermenting recipes. The rest goes into dinner as usual. Anyways today I cut up the bag of chayotes for fermenting. I'm also stewing the green mangoes with a bit of sugar and cinnamon into a quick mango preserve. I'm going to use some of that preserve to fill Chai spiced thumbprint cookies and the rest will be for toast or to have with curry.
