I'm making an electric skillet full of chicken drumsticks with "Perfect Rotisserie" seasoning on them. I'll have leftover rice, also some fermented cabbage. Simple simple.
defrosting some pork loin tonight will be pork chopsuey i slice them up julienne style then quick fry with some spices and throw in sliced celery and bean sprouts finish off with soya sauce and ground black pepper sometimes i add peanuts but i know the ones i have are probably pretty old so im not sure if ill use them
im a picky eater one day my mother told me that if i didnt like what she was making then i should cook for myself so basically ive been cooking meals since about age 11 or 12
Too hot to cook at this time of day, so I tried the potato salad with fermented vegetables recipe I mentioned in the kimchi thread. I had potatoes left over from yesterday and I chopped up fermented green zucchini, yellow zucchini, radish, red bell pepper, onions (the onions were in the fermented bell pepper jar) and a bit of cauliflower and added it to the potatoes with a bit of mayonnaise. I was out of carrots, I have a jar still fermenting in the cool room. I think they would go well too. I also added a hard boiled egg because I like egg in my potato salad. It was just a single serving (that's a salad plate, not a dinner plate in the picture) so I used 3 Tablespoons of the liquid from the jar. It was really good! Gave it a nice bit of tang.
That potato salad would be good with the fermented veg. "relish" hubby made but just putting some in the bullet until it was tiny.

Nope, I was thinking outside the box. ;-) I made a frittata for the first time today. I started with shredded potato, shredded onion and chopped garlic, fried that up, then cut up 4 strips of bacon and cooked that and put it over the potatoes, and poured in 4 beaten eggs with oregano, salt, pepper, and chili flakes. Once the eggs were solidified on the bottom, I added sliced tomatoes, basil, mozzarella and Pecorino Romano and put it under the broiler for a few minutes. Next time I'll use less bacon, I found it overpowered the other flavours, but otherwise it was good!
They were just okay. Next time I will leave out the orange and up the chocolate in the recipe. I'll take a pic later.
I made breakfast burritos for breakfast today. Fried up shredded potatoes with shredded onion to make hash browns, then fried up sausage and fresh jalapenos, put both on warmed tortillas and topped with eggs over easy. Wrapped them up and voila! It went great with the salsa. I'll be making these again.
