Sunny side up eggs today with hash browns and bacon, breakfast for lunch. And wild blueberries are in season here now, yum!
36 eggs...(made a batch of pickled ones) for supper was diced chicken breast fillets stir fry with curry and chipotle spice.....then i added chopped celery ... brocolli and a bunch of peanuts it was good
I haven't cooked anything today but last night I made a really good soup with tomatoes, chickpeas, okra, corn, and sausage. I wish I had leftovers because I am craving it again today
For supper I made some carribean fish (whole tilapias rubbed with oil and cajun spice mix, then I add diced tomatoes, onion, garlic and jalapeno pepper, and cook in the oven), with a coconut rice, fried plantain banana and a salad. It was killer.
I didn't take a pic (!!) but I made cornbread the other day. I used corn grits cornmeal that I usually use for polenta, it's grittier. It seemed to taste more flavourful than regular cornmeal.
Here's a nice graphic of the three different grinds. The masa looks white because it's from white corn.
The polenta grind was definitely more yellow. I want to try the blue cornmeal. Blue cornbread would be cool to make. I wonder if there's much difference in flavour.
I wonder about the cornbread, in my experience the blue seems denser in chips and tortillas and not quite as 'corny' flavored
feeding my recently acquired ocd broccoli addiction threw out the leftover pizza and beef with broccoli is on the menu...cooking it up in the next half hour
Go for it, blue corn is delicious! I made some hard-boiled eggs this morning for sandwiches, salads or just to munch on as a snack, european hor-dogs with fries and salad for supper and now I'm baking a vanilla cake made from scratch!
Thanks for the input, bassline. I've ordered the blue cornmeal. We do the same with eggs here, they're so versatile! I'm intrigued by the hor-dogs, I might have to try those too! ;-D We had a break in weather, a few cooler days last week, so I took advantage of it and made a coconut seafood chowder with lobster, scallops, crab, clams and oysters, and potatoes, carrots and celery. You use coconut milk instead of milk or cream. It's not as rich as using dairy, but I like the hint of coconut flavour it gives the soup.
Oh you'd be surprised, coconut milk is as fat as it can be (which gives it its sweet creaminess I think)! BTW, this chowder looks killer.
True. I should have said it's not as thick as with dairy. And yeah, it was one of those moan-with-every_spoonful meals.
