    Wasn't that video good? Man, you should have seen me trying to flip omelettes before. I'm terrible at flipping! I couldn't make a decent omelette to save my life. Then a chef advised to google Pepin omelette… with the comment "you'll thank me". lol That video was a lifesaver. Who knew it could be so easy! I still have to try the Classic French omelette. I want to try the one he mentions in the video, the "Fines Herbes" with chives, parsley, tarragon and chervil. And using the Classic technique. That one may take me a year to come close to mastering… getting that small curd and light colour and that nice shape.

    That's a great looking plate, Luce! And a beautiful omelette, you're a natural at flipping those eggs. I usually end up with egg on my face. Literally. :D

    That Jacques Pépin video is helpful. I'd seen some Julia Child cooking shows, they make a funny pair, but I should have watched Jacques for his French style omelettes.

    Thanks, Baz! No flipping, I used the Pépin fork method. And it's so much easier to do when you have the right equipment. I got me a nice cast aluminum nonstick pan. It's a little marvel!

    Oh, the fork method, I must have missed that part. That's a cute pan! Much better than my lousy pans. I need to get one like that! But those must be pricey, unless you got a good deal on it.

    Missed it? You didn't watch the video, did you?

    It is an expensive pan, Baz, but I got it for a song! You have to look out for the right situations. You never know when an amazing deal will present itself!

    lol That is so you. I'm sure you'll whip up some tasty (and creative!) meals with that pan.

    Rib eyes have been on my mind lately, so I picked up a steak yesterday. It's Angus beef, I've been wanting to try it. Not as impressive as Press's, but it will have to do.

    Thanks, the piggy pan and me are made for each other.

    That's another good pan you've got there, I'm sure you'll grill a tasty Rib Eye steak. I might get one of those, I've had chicken on my mind lately, I'm sure it would be great in the grilling pan too.
