ground cow and frozen spinich in the microwave. a little powdered bullion and lemon to taste. that was my breakfast around 03:30 local today. now its 06:30 and my stomic is telling me its time for something more.
I got an immersion hand blender today so I can make that now. Just from reading the recipe, I think I'll eat that up fast and won't have much leftover to freeze. Right now I'm enjoying some tian based on the recipe that Aeri posted. Edit:actually I must have looked up a recipe after I saw Aeri's tian picture post. I saved the recipe and thought it was hers. If anyone is wondering why the tomatoes don't appear to be equally cooked with the rest of the ingredients, it's because I forgot to put them in until I checked to see if the potatoes were soft (after 2 hours...in the crockpot). I cooked it for an extra 50 minutes after I put tomatoes in(I should have taken another pic after the tomatoes cooked, but I had to dig in instead). I know it would have been even better if I'd have put the tomatoes in at the beginning. I didn't saute the onions or garlic. I just put some oil in the bottom of the crockpot, added the onions and minced garlic, and turn it on to high. I then chopped up the zucchini, potatoes, and squash(and forgot the tomato), which took me 30 minutes. I added the chopped veggies and cooked for 2 hours. The potatoes were soft so I added cheese and started to cook for a few more minutes. I then added the tomatoes, cooked some more, the added more cheese....
The other night I made chicken baked in salsa verde and shredded for tacos, but I haven't cooked much since then because I've been sick. Does warming up soup count?
Man that looks good! I bought a bunch of veggies to ferment and they're all so big that I'm going to have quite a bit left over (I don't have enough jars), I think a tian would be perfect. I bought kohlrabi and they're so nice and fresh, I'll put that in the tian for sure.I've been salivating over all these tians posted!
My tian turned out ok. Next time I'll saute the onions and garlic, remember the tomatoes, and I'll cook it in the oven. The veggies around the edges got a little crisp. I hope to get a little crispness on top by cooking it in the oven. I think kohlrabi would be good in tian.
Thanks for the extra info. I was thinking of making it in the oven too. Some things I prefer in the oven. I have a round crockpot and don't think it would do a tian justice. I must be blind. I don't see Aeri's recipe. Can you (or Aeri) direct me to it? (I have a sneaking suspicion your forgetfulness is at play here. :-D )

SUMMER VEGETABLE TIAN SAVEPRINT PREP TIME 15 mins COOK TIME 45 mins TOTAL TIME 1 hour Total Cost: $5.11 Cost Per Serving: $0.85 Serves: 6 INGREDIENTS 1 medium yellow onion $0.42 2 cloves garlic, minced $0.16 1 Tbsp olive oil $0.11 1 medium zucchini $0.75 1 medium yellow squash $0.56 1 medium potato $0.77 1 medium tomato $0.71 1 tsp dried thyme $0.10 Salt & pepper $0.05 1 cup shredded Italian blend cheese $1.40 1 Tbsp chopped parsley (optional garnish) $0.08 INSTRUCTIONS Preheat the oven to 400ºF. Dice the onion and mince the garlic. Sauté the onion and garlic with olive oil in a large skillet over medium heat until the onions are soft and transparent (about 5 minutes). While the onion and garlic are sautéing, slice the zucchini, yellow squash, tomato, and potato thinly (1/4-inch slices). Make sure the potatoes are very thin so that they soften quickly while in the oven. Coat the inside of an 8x8" casserole dish with non-stick spray. You both are little devils!! Seriously under 20 I can pull off with a days notice but over I need a couple of days. I would be happy to feed you all though!!! Anytime! Tonight I made bangers and mash. I do the sausages in a consomme broth with savory and onions. Served over mash and had brussel sprouts with butter, lemon juice and maple syrup and yellow beans with enough butter to make the simply delicious.
Those Tian pictures are amazing and I am going to have to make one! I am still full from dinner and they are making me feel I should be cooking.
Do you really? I'm impressed. Actually it was Irmi that started us on the tian. Hers looked great. I have kohlrabi and striped beets and golden beets. I wonder what kind of tian I could make with those. Would they go with the potatoes, zucchini and tomatoes that the above recipe calls for? What do y'all think? Any other suggestions?
Oh yes! Irmi's had pumpkin, sweet potatoes, and carrots with the zucchini. I'm not really good with matching flavors, but I think the beets would be good with tomatoes(like borscht?). Surely zucchini and potatoes would be ok too? I'm definitely thinking sweet potatoes with the beets! I'd probably eat kohlrabi in anything.
LOL I knew you'd say sweet potatoes! Have you added sweet potatoes to your teas yet? Re the beets, these are striped and golden beets, nowhere near as sweet as red beets that you add to borscht. So not sure about the tomato.
I wonder if the beets would bleed. You could always put them with like coloured other veggies and would help. I would maybe use yellow and green zucchinis and sweet onions and potoato.
I cooked a crockpots sweet potato and chicken recipe that Aeri posted a while back. I started digging in before I took a pic. It's delicious! I'm eating some now, and freezing the rest for work meals. It looks better out of the crockpot.
