Chickpeas simmered in a creamy onion tomato sauce and served over couscous. I really need to name this dish so I don't have to describe it every time I make it.
bbq chicken breast that i cut thin and marinated in italian dressing and some bbq shrimp on the side with garlic seasonings (cooked in tin foil on the side)
I made a big salad with mushrooms, cucumber, red onion, yellow tomatoes, chickpeas, black olives, feta, and pecans. I suppose the only thing I actually COOKED was the chickpeas, but it was damn tasty nonetheless. I still have a big pile of it left if anyone is hungry.

These are great slow cooker meals Expanse is making. I've also got this recipe and the Moroccan lentil soup recipe items on my grocery list. Instead of providing us with these yummy healthy recipes, I think every time Expanse makes a new one he should just cook an extra big batch for all of us!

How accurate is the timing on the recipe? I'm making this tonight, but 2 hours doesn't seem like it would be enough time in a crock pot?
I went 3.5 hours on high because my spinach wasn't fully thawed (it was completely crumbled, but still cold). Comes to think about it, that might be why I had a little extra liquid. Also, I didn't turn the slow cooker on until I had all of the ingredients in. On other recipes I've been starting it when I first add ingredients. My zucchini was still firm at 3.5 hours, lol . I'd say that 3.5 to 4 hours on high should be ok, even with room temperature spinach. I'd check at 3 hours though, in case your slow cooker is hotter than mine.
Naw, I'd prefer if you did all the work. Of course, if we could get Heat in on it, you wouldn't have to cook at all. For the next month!

The temperature cooled right down (feels like autumn!) so I pulled out the crockpot today. I'm making butternut squash soup, I've never made it in the slow cooker before. I'll report back with the results.
