It's supposed to get hot and humid again tomorrow, so I cooked up a batch of frozen meals today. Vegetable Fried Rice with egg.
There is a huge pot of meat sauce on the stove right now and I'm going to go boil some pasta soon. Yummmm

I went to a.middle eastern restaurant tonight, but I just popped in to say my favorite Italian dish amatriciana has been in the news this week since the city of Amatrice was hit hard by the earthquake earlier in the week, and during an annual festival celebrating their most famous dish, bucatini all'amatriciana.. I normally make the dish with spaghetti but i did pick up and make it with bucatini a couple of weeks ago without knowing this is how it is traditionally made. The people of Amatrice started making it hundreds of years ago by wrapping pasta around wire to create a hollow tube inside the noodle. I have been making it with garlic but I also learned it is not traditionally made with garlic and in fact a chef during the festival, before the earthquake that is, was shunned by other chefs in town for admitting his secret ingredient is sauteed garlic. Anyways, sorry for boring y'all haha I have just had fun learning about my new favorite food and thought I would share!

I made fish chowder for dinner. I didn't know what to make and it was actually kind of too hot for soup, but I had a ton of leeks and potatoes and a bunch of fish in the freezer so it just sort of happened. It was delicious though and I'm looking forward to leftovers tomorrow for lunch.
That sounds so good. I love seafood chowder. It's hard to make seafood meals on a low sodium diet because most seafood is pumped wiith sodium phosphate. I really have to read the labels and it's hard to find the ones without it. I cooked yesterday too even though it was hot. Must be we're starting to fatten up for winter! I made stuffed peppers because I had rice left over from another recipe, and froze a few for future meals.
I really should be watching out for sodium in things like that. I rarely add more than a tiny pinch of salt when I'm cooking but I'm sure most packaged foods I eat are full of it... Well today I was really lazy and only made half a meal. I asked nick to chop potatoes and pull out meat from the freezer while I was at work and when I got home I just threw the potatoes in a pan, threw pork tenderloin on top covered the whole mess in some barbecue sauce and baked it. I meant to do some veggies on the side halfway through the cooking but I was too tired so we just had really boring meat and potatoes. It was somehow pretty good for 0% effort though.
