Since I can't pop into McDonald's for an Angus burger anymore (waa) or any bought burger, I decided to make one. I've been craving a burger for so long. Sirloin ground beef, with salt-free herbs and spices, pan fried, and leaf lettuce, tomato, chopped red onion, topped with sautéed garlic mushrooms, fermented hot peppers, and a bit of mayo and Dijon mustard. On a brioche (egg bread) hamburger bun. I can't tell you how good it was.
I've never eaten nettles beyond steeping them for tea. I see recipes where they substitute basil with nettles. I'm going to have to try that.
This morning I didn't know what to make from this left over pork mince I had in the freezer so I made mini pork meat balls and cooked them up with some Mac and cheese/bacon pasta. Simple and filling. cheap too.
You can substitute nettles for spinach/ silverbeet aka swiss chard and cook much the same way. If using older nettles, discard the stalks as they are rather stringy. You need 1/2 a bucket full to get a decent feed.
Lamb chops with mint yogurt sauce, greek rice pilaf and a roasted cauliflower and tomato dish with pearl onions! Dinner was gooooood! I also have some rice and a bunch of veggies leftover to take to work tomorrow for lunch.
Hubby shopped this week and is cooking what he bought. Today he cooked some pieces of country ham, rib eye steaks, and pork chops. He made potatoes and onions to go with the steaks. I think he plans to put the ham in some turnip greens later this week, IDK. He has summer squash he said he plans to fry, again IDK... there are beets for roasting. I'm letting him deal with all of it this week.

I'm making soup with all of the veggies in my fridge that needed to be consumed. I'll let them boil in a big pot on my stove for a few hours, and then I will blend everything up. My husband likes to make fun of me when I make this soup. He says it is all we'd need to get through the apocalypse because it is so thick and full of nutrients.
I have been in the mood to cook today. I made spaghetti all'amatriciana for lunch. i've never had it before so I dont really have a point of refernce but I think mine was pretty damn good. Definitely one of the best italian dishes i've ever had And i have been slow cooking cuban style pork ribs cooked in a mojo sauce and cuban black beans all day. I am boiling yuca right now and once that is done i'll be pigging out on my first attempt at cuban food!

Steak tonight. Did corn on the cob, portobello mushroom caps, sauteed zucchini with red onion and garlic, cucumber avocado salad and balsamic basil tomato with grilled halloumi cheese.
Oh my, that's a feast! Everything looks so good. I am going to (try to) make Scottish oatcakes today.
I'm about to get my hands dirty and sticky. Before my evening nap I cut up roughly two kilos of beef into little slices for jerky. My hands cramped and ached and has prompted me to get new kitchen knives. I use half a bottle of honey, half a bottle of whiskey bourbon BBQ sauce, spicey pepper powder, tobasco sauce, lemon juice and salt to make my marinate for the jerky. So it's all in a container soaking that in. Shortly I will pull the pieces out and place on my tray for dehydrating.
Even though the guy with the shift before me started it I finished cooking a pork roast in the smoker that is going to be pulled pork tomorrow. C/S, Rev J
Tonight I made steak and pepper kabobs (for my husband) and salad with spinach, caramelized onion, strawberry and cherry tomatoes with a raspberry vinaigrette.
