    Last night I made a giant pot of spaghetti and meatballs for everyone in the house. Today I made myself scrambled eggs with peppers and onions.

    Last night was roast beef with gravy, Yorkshire puddings, mashed garlic taters, yellow beans, asparagus, cucumber and dill salad and a tomato plate with grilled halloumi cheese. My sister and mom came over and it was their request. Since we only had it week ago it was not something I had planned on making but they are both living alone so a roast beef is not something they make for one.

    It was good though. :)

    I made beef short ribs with a red wine sauce and served over garlic mashed potatoes. Started off with some Chardonnay and Camembert on wheat crackers while the potatoes cooked, then stuffed myself full with dinner and a glass of Cabernet. I was too stuffed for dessert but I made room for a couple little dark chocolate-covered orange jellies. I'm not sure what the occasion was, but I'm totally okay with "just because" at the moment. *yawn*

    Last night I made my chicken burgers. I use extra lean ground chicken, Dijon mustard, rosemary and parm in them. Did fixing to dress them with and tater wedges lightly cooked with some paprika and a little cayenne.


    For lunch today my tummy was a little off so I went with some comfort food, grilled cheese and tomato soup. :)

    Pasta with onion and purslane. For years I have treated purslane as a weed until last year when I read on FB that you can eat it.

    I chopped up all the veggies for a crock pot chilli. I won't cook it until tomorrow though. I wanted every thing ready to go in before work tomorrow.

    Today, I'm making hot dogs loaded with coleslaw and red potato wedges with a side of mixed fermented veggies.

    I'm making pork ribs in the tajine for dinner. They've been cooking for the last 3 hours, the house smells divine! I threw in some Caribbean sweet potatoes afterward and of course there will be a side of fermented veggies. I think I'll have some of the squash today. The jar is almost gone. :-(

    I marinated beef sirloin strips in red wine, garlic and montreal steak spice. Then chopped onion, celery and seared the meat with those in a pot. Added in beef broth and simmered it for an hour. Then added frozen french green beans until they were done. Thickened it with a little cornstarch. Served over jasmine rice with a kale salad and fresh rolls.

    I cooked meatloaf two days ago. We've been eating it with baked potatoes.

    I have to cook tomorrow but I don't have an idea what.

    I cooked a big ham, in Coke, stewed cabbage, and heated up the Stouffer's Mac & Cheese.

    i saw chicken breast was on sale so they always have giant packs of chicken tenderloins when that happens so i picked up a pack ...made a batch for dinner and froze enough for 3 more meals in the future
