My d-i-l and I just agreed that we're going to hurt ourselves tomorrow! She's making flan, corn casserole, and macaroni and cheese, and rice con gandules. Her s-i-l is making turkey and ham. I have no idea what else she will have. Her husband works for Panera bread and always brings bread home. There's also supposed to be a birthday cake for hubby, who's birthday was Sunday.
It all sounds delicious and I have a feeling it is going to be a feast. Tonight was a kind of throw together meal as it was a really busy day. I bought a precooked bbq chicken. We had a Kale salad and beet and goat cheese cappellacci lightly tossed with olive oil and dressed with garlic herb goat cheese crumbled. I had some left over chicken gravy that I reheated to go on the chicken.
My daughter-in-law's sister-in-law (Columbian) made a Columbian Turkey - Rollo de Galantina de Pavo -Turquía, Ham, Potato Salad, and Coquito rum and coconut drink. My daughter-in-law (Puerto Rican) made Corn Casserole, Macaroni and Chesse, Rice Con Gandules, and Flan. I made Cranberry Sauce, Yams, Dressing and Gravy.

HW, would you care for pumpkin, sweet potato, or chocolate cream pie? Or would you prefer some vanilla ice cream instead? Or have some of each.... As much as you would like. I can also add chocolate syrup, nuts and whipped cream onto your ice cream to make you a sundae. And would you care for some apple cider? And help yourself to the big bowel of mixed nuts. The nut cracker is there for you. There are walnuts, almonds, pecans and Brazil nuts.

I made my cranberry applesauce again to take to my friend's family's Thanksgiving feast. He made dark chocolate whole wheat chocolate chip cookies. The extra dessert wasn't really needed as there were already homemade blueberry, banana/chocolate creme, lemon meringue, and pumpkin pies. So. Much. Sugar. But the apple sauce was a success. I used macoun apples instead of cortlands this time and was terrified when I opened the lid of the slow cooker and found an unappetizing soup of apple chunks swimming in a ton of liquid. I forget sometimes that other apples have more water. I strained it and pulsed it in the blender a bit and it was perfect. Maybe a bit less orange peel next time... But again, maybe not, because it got rave reviews from my friend's mother, who hates sweets of any kind. Otherwise, there was standard turkey day fare- roast turkey, gravy, mashed taters, stuffing, and this year they made Brussels sprouts with bacon and dried cranberries and a roasted blend of diced butternut, potato, onion, pecans and wilted baby spinach. It was a good day. I didn't take any leftovers with me, but I still have shake n bake pork chops, lemony asparagus, a quinoa/brown rice blend and my own Brussels sprouts to eat from before the big feast, so I'm all set.
I've got lentil soup in the crock pot tonight. It's my first time cooking it with chicken. I boiled broth on the stove, laid chicken tenders in the bottom of the crock, seasoned with salt, pepper, spicy paprika and turmeric and tossed in a couple bay leaves. Then I poured the boiling broth over the chicken to kind of start the process of poaching it a bit. I programmed the crock to cook 10hrs on low and then stirred in chopped celery and potato, a can of diced tomatoes and a pound of dry lentils. Usually when I cook chicken in the crock pot for this long it shreds easily. Hoping that happens here as well instead of just soaking up all the water and burning my house down when the beans get too dry. Ah well, I have a smoke detector.
I didn't cook anything. I was counting on hubby saving me half of the leftover meatloaf but he ate it out from under me. I'm pissed. That was dinner. We were supposed to split it.
Go get him some McDonald's french fries, then eat all but a couple on the way home. That will teach him.
It's not pretty, but it's ok to eat, lol. I like it. I cut off some slices, put some tomato sauce, parmesan cheese, sweet basil, and garlic powder on them. Then toasted. They weren't bad. I kinda mixed/matched some recipes from slow cooker bread google search. Edit: I forgot...I put hot pepper flakes on them too.
One recipe called for lining the slow cooker with parchment paper. I did that and I'm glad I did. I only had to clean the mixing bowl and spoon.
