I have kamut and oat muffins in the oven right now and a pork roast in the crock pot! The muffins also have raisins, chia seeds and banana in them. For the pork roast I put apples onions and carrots in with it, seasoned it with thyme, and then covered it in a hard cider that I got and didn't like much.
Last night I made ribs. The prep on the ribs was ginger, garlic, pepper and gingerale slow cooked in the oven for 5 hours and then drained and glazed. That way there is not the fat and grease on them. I used a garlic glaze. To go with it I made bean sprouts with peppers, water chestnuts, baby corn, red onion and celery. Snow peas and jasmine rice. The egg rolls I ordered in from a take out. It was good and tonight will be leftovers as the kids are not home until later from school.
I mixed together all the dry ingredients for some savoury cornbread muffins with cheese and veggies in them. It's just waiting downstairs with a lid on it until I get the strength to finish them. I actually mixed that together before work earlier and ran out of time. That's sort of half almost cooking. I'll finish them later tonight or in the morning. Oh yeah I made a really delicious cauliflower/potato mash the other night to go with my roast. I actually think I like that better than plain mashed potatoes, plus it's healthier!
Damn, I was going to make corn muffins for my chili and then totally forgot. I was going to do jalapeno and cheese. Thank you for reminding me. I still have half a pot left.
Rachel Ray, get outa the way. I can't believe there aren't any other members dying over these pics and descriptions of the meals (I'm probably just the only one that's actually posting about dying over them). I need to give back. I'm going to make something nice tonight to post about.
I have the cauliflower/potato mash but I think my ratio was off. What ratio did you use? I would love to try them again. I'm with you on this. I love this thread and I drool over the pictures and descriptions. I have had so many idea for different ways to make things from this thread. Even some ingredients that I had never tried before are now familiar. It is one of the first things I check when I come on.
I finished those corn muffins this morning. I added cauliflower, tomato and Colby cheddar to them. They are delicious but I will add some jalapeƱo next time.
i picked up a marinated sirloin at the butcher shop on the way home from a short road trip and just finished eating it cooked it on the bbq and it might be the last bbq steak for a while because some snowstorms are coming also had 2 small potatoes but i let the microwave cook those
The ratio I used ws about 1:1 there might have been slightly more potato though. It was about 4 medium potatoes and half a head of cauliflower.
I didn't cook. I took the leftover Mexican Goulash out of the freezer and had it with the Sweet Potatoes I cooked in the crock pot a few days ago.
I think that may be where I went wrong and I did not have enough cauliflower. I am going to try this again, thanks for the info. Tonight I stopped at the butchers when I was out and got 3 fillet mignons. I made a cucumber salad, tomato balsamic with basil, grilled halloumi cheese, grilled protobello caps and asparagus.
Well, I made something, but I didn't realize that I was missing an ingredient until I got home from the grocery. I thought there was some cream of mushroom soup here, but there isn't. I didn't feel like making another trip to the market, so I changed the recipe. I tried using onion and mushroom soup mix for flavor, instead of cream of mushroom. I cut up some potatoes, put them on the bottom of the slow cooker and set 3 boneless chicken breasts on top of them. Then added carrots, chopped celery, onions, and a sliced clove of garlic. Them I poured in a package of mushroom and onion soup mix, and water. It cooked on high for 3 hours, then low for 3 more. I poured some more soup mix on top of the chicken at the start of the last hour. It's not great but I won't let it go to waste. I'll be prepared for my next thread meal.
Maybe you just need to add some cream or even sour cream to it to make it a little richer in taste. That is all that the soup would have done. Worth trying it.
I cooked a Beef Chuck Roast in the the slow-cooker. I added canned mushrooms and sliced onions to the recipe below. I put some cornstarch in the drippings and made gravy. I cooked canned green beans in bacon drippings and made boxed potatoes because I was craving mashed potatoes and didn't have time to make them from scratch. I'll add a pic in a minute when I get a plate. Here's the recipe for the roast. The Italian Dressing is by Good Seasons. She doesn't really make that plain.
