I don't think I'd ever use a chinois sieve, I prefer keeping the pulp and having it thicker. The freezing sounds good too, it's supposed to be easier than all the fuss of canning. I can't wait to hear how it turns out.

I also like the freezing method because you have to add less sugar. I'm eating a bowl of applesauce right now! It's super tasty. All I added was a bit of honey and cinnamon. It tastes like my grampa used to make! The rest is cooking down, but will probably take a while. I just chopped up a few pounds of heslop crabapples. I am going to make a crabapple butter with that. This time I am leaving the cores in and will try pushing it through a mesh srainer. It isn't as fine as a chinoise, but will at least remove the peels and cores.

Mmm you should try it! It is super easy to make, just start the bone broth early in the day (usually made with charred onion and ginger, and star anise, which I can't find so I substitute anise seeds, cinnamon stick, coriander, cardamom, and cloves) then when that is done bring it to a boil and pour over raw, thinly sliced beef and rice noodles and whatever else you want in it - I usually do basil, mint, and cilantro, bean sprouts, chili peppers, and a lime. edit: And green onions, can't believe I forgot those

Poor Expanse, nothing worse than a nuked potato. Did you at least bring butter? I have to get out of this thread and stop looking at food. It's not motivating me much to get out to the lake for my walk. It's cool but a bright sunny day. I need my rays!
