Vegetarian one pot

    Hey! I need ideas on one-pot vegetarian dishes...Uni makes us feed ourselves on sundays and I want to feed my friends, but some are vegetarian...I'd like to accomodate them...Any cheap ideas?

    Hey Holly,

    Something cheap and delicious: enchiladas a la the lazy way. Pick up two cans of green enchilada sauce, a pack of tortillas, a block of white cheese. You can either put a little cheese and a wee bit of sauce inside a warm tortilla and melt the cheese/toast it in a pan, or microwave them, or bake in an oven at 350 for about 30 minutes or until the cheese is melty. (If you do it the last way, make sure to smother them with the leftover sauce and put tinfoil over them until the last 5 minutes. For any other way, pour the warmed leftover sauce on them when they're cooked.) Very delicious with either guacamole or salsa.
