Any favorite vegetarian chili recipes to share with me? My plan is to make a big batch for a friend who has been away for many years. I'll make a vegetarian chili and then cook up some meat on the side for the carnivores to add to it.
Vegetarian chili is very forgiving . That is, you can easily "wing it" and end up with something delicious. This recipe is a good starting point, great flavors and fairly simple: http://minimalistbaker.com/1-pot-red-lentil-chili/ Obviously, you don't need all of the ingredients listed in the above recipe either. The ones I would say are essential: White or sweet onion garlic bell peppers -- red or green salt/pepper diced tomatoes or a jar of salsa cumin & chili powder some type of bean--black, kidney, or both. For bean haters --fake meat crumbles? veggie stock or water + tomato paste something spicy --jalapeno or hot sauce (essential if you're me!)

For the purists, I call it Texas bean stew. Years around Terlingua freaks made me aware of the beans are the devil mindset. (Incorrect, but a mindset nevertheless.)
