Unappricated Lunch

    I'm home for the summer from college and since I've been home my parents keep cooking meals that are pretty much totally meat, they don't even have any fruits or vegetables in their house. So today my mom had come home from work and I cooked my mom and my brother a totally vegan lunch which I thought tasted really good. This is what I cooked:

    Summer Pasta


    Ingredients (use vegan versions):
    • handful of fresh green beans
    • 2 medium fresh tomatoes, seeded and peeled if possible
    • garlic to taste (I use about two cloves)
    • olive oil to coat a small skillet/frying pan
    • 1 tablespoon fresh chopped onion (approximately)
    • 3 cups prepared thin spaghetti or vermicelli
    • other herbs/spices as desired
    Directions:


    1. Coat the bottom of a small frying pan with extra-virgin olive oil.

    2. Mince garlic and chop onion.

    3. Add garlic, onion, rosemary and whatever other seasonings you choose to the frying pan. Turn the heat on very low and allow the flavors to incorporate into the oil.

    4. Quickly chop the seeded, peeled tomatoes and cut the green beans into one inch pieces.

    5. Throw the vegetables into the oil mixture and turn the heat up a bit.

    6. Cook until mixture is fragrant and the tomatoes have broken down but have not completely disintegrated. Beans should be crisp-tender and onion should be soft.

    7. Pour over pasta. Serve hot or cold.

    Serves: 3 Preparation time: About eight minutes...

    And peach soda that I made to drink with it.

    They ate one or two bites of it and a sip of drink and said that they didn't like it and that it "needed meat"

    Oh well, at least now I have some food I can eat for a while, since I can't eat any of their food.

    God how totally ungrateful. Even my devout omni family are good enough to eat veggie with no fuss. And no fruit or veg, wow they are going to have major health issues some day.

    Anyway, that recipe sounds fab. I'll try that out some time thanks.

    Ive met her parents, their the kind of people who would say they dont like vegan food just out of spte, and are very unapriciative, shes a marvelous cook

    Let them know how you feel. You know, I 'd tell them I feel as though no one appreciated the meal. Also how inconsiderate of them to cook all of these meat based dishes when you home, and no meal options for you !!! Finally, that dish sounds awesome...:)

    i dont think she could make them change anything, they yell at her if she looks at them the wrong way.

    Haha. Belive me she does, quite often. Shes half my food budget.
