Go on... Looking to relocate in order to start my food truck. I have everything in place except the location. See, the food truck is only to establish a brand that my biz partner and I can segue it into a brick and mortar restaurant. Problem is where we live commercial rents are laughably high. Its virtually impossible to stay in business. So we've accepted the fact that we will need to relocate. Thanks to you we will research Le Mars Iowa

It's a reference to an Ernest Hemingway book (sorry if you already knew that and here I am telling you what you know) that takes place in Paris, so French food would make sense But I dont know anything about French food lol Most likely southern/soul food, I'm pretty good at it. With an emphasis on fresh, local seasonal ingredients I dunno, it's sort of a pipe dream...I would love to do it but I'm just a home cook, I've never really worked in a restaurant, I have no experience making food for high volumes of people. I would feel more comfortable doing it if I could go in together with someone who has restaurant experience
Omg I'm picking apart this post because it makes me wanna have babies I wanna "take place" in Paris ( I think you know what I mean) too. Now that that dirty stuff is outta the way... Nah I don't know the book, but I know who Hemmingway was. But i never was much about book learnin But French cuisine... omg! that's how you do it. Local and seasonal ingredients plus a small menu of the handful of things you can cook no matter what. Like, if you can make it while you're house is burning down around you, that's what you serve! all chefs start as home cooks. Just sayin working in a restaurant is almost necessary for the experience it but it also sucks. Unless of course you're the restaurant owner too. But yeah... more often than not you're making someone else's recipes doing what someone else wants. Like from a food establishment business owner point of view its essential. As a true chef it can be heartbreaking. But I love cooking food. I love to create something and when people taste it... they smile. I live for that. If you feel the same way, it should be more than a pipe dream
