    Bigos - Wikipedia ... It's a Polish dish known as Hunters stew. I usually use a chicken sausage in mine.

    Buristo and Mallegato are blood sausages similar to the Boudin Noir Francaise (which lends its name to a French Foreign Legion March Song ) and to the British Black Pudding.

    Buristo is contained in an entire pork stomach, in this resembling a sausage that is mentioned in the Odyssey itself (!) , it appears that when Ulysses finally made it back home and single-handedly vanquished all the usurpers, was served a pig stomach full of cooked blood and fat by his loving wife Penelope because you know, classic heroes were that badasses.
    Mallegato is more sausage-like in shape. Both are made with cooked parts of the head of the pork, like --> HEAD CHEESE (link), pork rind, cubes of pork fat cooked in sweet wine and filtered pork blood, plus various spices. Mallegato may also contain raisins. It was part of my daily winter snack, together wit a few cloves of raw garlic, cayenne peppers, bread and a nice glass of blood red wine . These sausages are only available during the cold months because they spoil easy. Some fry floured slices of them before eating, it will melt out all the blood revealing the true nature of this sweet sausage. It is packed with iron and blood proteins, vestiges of a time when diet was poor and nothing could be wasted. They were banished until a hygienic method for extracting blood was invented, the so called suction knife, that draws the blood straight from the jugular vein of the pig.

    Mortadella, or Bologna sausage , or baloney is the dad of the all-Soviet Doktorskaya Kolbasa or doctor's sausage - a sausage devised to be something more acceptable, less fatty than mortadella and a viable food for the famished post-WWI masses of the Union of Soviet Socialist Republics.

    Follow "Life of Boris" channel and You will find plenty of russian recipes, chebureki included. Also: how to make your own condensed milk and a sweet no-yeast bread that rises by virtue of kefir milk alone, @Candy Gal .
    The Chinese make chebureki too, but they don't deep fry, rather steam cook them A few new Years' eves ago there was a Chinese girl at my pad who prepared an enormous amount of meat and onions stuffing for them. I went on for days attempting to finish it all but was eventually forced to give up... It was enough stuffing to feed an entire danwei.
