First mentioned in print in 1893, it is commonly believed to originate from Eton College and is served at the annual cricket match against the pupils of Harrow School.
Into a small saucepan put 300ml of water, one cup of sultanas, 60g of butter and one teaspoonful of bi-carb of soda. Bring to the boil and leave to cool off for a few minutes. Into a mixing bowl place 180g of self-raising flour, 2 large or 3 small eggs, 180g of sugar. Mix together. Strain the water from the saucepan into the bowl and whisk together. This can be done with a food processor. Put the strained sultanas in 6'' -8" cake tin. Pour the mixture on top of the sultanas. Bake middle shelf of an oven 180Âșc for 45 minutes. To make the sauce stir 100g of butter , 2 tablespoonfuls of brown sugar and I tablespoonful of cream in a saucepan on a gentle heat for a few minutes and pour over the pudding when is has finished cooking.
Hint,don't have any sultanas at the top of the pudding as they burn too easily. An Australian variation is to not use sultanas but spread the butter slices of bread with marmalade.
