When I read the Laura Ingalls Wilder books, I learned than butter is only yellow in summer because of the green grass. They have to dye it in winter. Her mother used the juice of carrots.
That's it, I'm going to the public market and buying some real butter. I should just put a cow in my yard and churn that shit.
I am wondering what the best option is for veges and people who want to avoid dairy? I have been looking into this recently. Margerine is totally crap. But I try to avoid dairy. Maybe I should stop using spreads.
there is no such thing as an absolute proof of anything. as for butter, well it IS better then many if not most of the more common substitutes for it, BUT, eating more soups and baking, brazing or micro-waving, instead of frying ANYTHING is a hundred times better then that. butter has its place. on corn and potatoes, for example. but butter AND its substitutes are among those things the LESS of which we consume, the better.
I think Matt's obsession with butter is getting a little out of control. I like butter, but I wouldn't be eating spoonfuls of it no matter what the health benefits are.
you could substitute with coconut oil for some things. or just use natural peanut butter (or almond butter, etc) instead of butter.
Lately, I havn't been using anything. I used Earth Balance in the past though..dairy free and you can usually find it in any super market (at least around here), not just in health food stores.
Not being a chemist,I don't know if it's true, but I read a few years back that margarine is a one or two molocules away from being plastic. if I want plastic,I'll munch on a yo-yo. Loves me some butter.
