I love a good curry or even an ok curry tbf! Generally, I mix Phaal curry powder with with a much milder curry or moderate strength curry...beef curry or king prawn + tuna curry is pretty much my favourite. Normally, I go: Meat, onions, peppers and I often use powerised lentils to the curry mix to thicken and serve with either chips and or naan bread.
mast of the currys I make .are from authentic origins , most of my dishes I make with mutton ,a few are are chicken ,some are made from mince lamb ,and some vegetarian ,I make ,mutton vindaloo ,mutton madras .muttom korma, mutton rogan josh ,ect ,most of the dishes are of an onion base ,some have tomatoes ,some have cream ,some have tomato puree ,and some yougurt .I also make a good chicken dhansak ,where the sauce is created by using several different types of lentils
the difference from using mutton or lamb ,is that mutton is cheaper ,mutton is a tougher meat and therefore needs longer to cook to become tenderised generally a mutton curry needs to cook from between 3 and 4 hours ,the benefit of using mutton ,is that the long slow cooking time enables the flavour of the mutton to infuse into the rest of the dish
I once accidentally discovered that Curry goes incredibly well with peanuts, believe it or not. Peanut Soup. Just basically make Chicken and Rice soup from scratch. Add ½-¾ Cup of Peanut Butter (depending on size of soup pot). Most recipes add Tabasco I think. I found a recipe that uses Curry Powder. And I have loved it ever since. (Vegan versions are also possible, of course.) And I have been trying to perfect my Peanut Curry dip. Peanut Butter, Sour Cream, perhaps Mayonnaise and Ketchup and Curry Powder. A little garlic salt to enhance perhaps. As I said, I still have to work on the proportions. But this dip does go very well with vegetables. (Of course I use the term 'curry powder'. But if you used that term in India, they'd have no idea what you were talking about. I find it easier to use a Curry Powder though. And some store brands are pretty good, I've found.)
i have a curry recipe here that i use sometimes ,its a version of korma ,so the sauce consists of yougurt ,but also includes ,ground almonds,,,i also have a fish curry recipe that also involves adding almonds ,so i think nuts go well with some recipes
I see you have real Middle Eastern skewers! I was raised on this kind of food. I have 12 different kinds of curries here!
