    Quick hint : want to make your bread more tasty ? take some rosemary leaves and chop them finely. Mix them in the bread with some good olive oil. Instant flavour boost. Don't overdo, a few pinches are enough for a whole loaf.

    No rush my sweet friend. I will also ask a close friend who's Mother was from Sri Lanka, although she passed away last year, he will have her recipe books. x

    Here what disappeared was yeast and durum wheat plus all of the flour mixes dedicated to bread making like the 7 cereals whole type, while common white flour 0 and 00 is still in supply. I'm almost out of durum wheat flour. Then yeast resurfaced, I guess the supply chain is just readjusting priorities. It is unlikely that food is already going scarce, wth the industry of food has some resilience to this kind of events. I know that the Chinese, now years ago, began stockpiling huge amounts of staple foods like, mainly, rice.

    Viet Nam managed this emergency the Socialist, collective way:

    SODA BREAD RECIPE

    This is as simple as it gets. You can use a machine to knead it, if you are in a hurry/too lazy. It is perfect if you're in a hurry because it will raise right in the oven: in one hour your bread loaf will be ready. It is a traditional Irish bread, they say. Recommended for breakfast.

    Ingredients :
    • more than 500 g. flour
    • 1 teaspoon baking soda
    • 1-2 teaspoon salt
    • the juice of half a lemon
    • 400 ml. whole milk

    You will need some more flour for kneading so be sure you have another 100 g of it , give or take.

    First thing, fire the oven up at 180-200 C° . dunno how much it is in F°, nor I care.

    Put all the dry ingredients together in a bowl (salt, flour, soda) and mix them.
    The flour, I warmly suggest you to pass it through a sieve.

    Squeeze the lemon juice and mix it with the milk.

    Right after, add the milk-lemon mix to the flour and mix up all the stuff in the bowl.
    Don't mix the stuff for too long, because the soda is already doing its thing.

    On a flour covered kneading surface, pass the dough that will be pretty sticky by now and with floured hands knead it to make a ball of it. Again, don't go on for too long.

    Now chuck the loaf of dough upon a floured baking tray. You can also put baking paper on the bottom of the tray and sprinkle with flour the paper sheet.
    Personally, I keep a slab of soapstone in the oven and when it's hot I just slip the loaf with the oven paper onto it.

    With a wet, sharp knife, carve an X over the loaf.

    Put it into the already-hot oven ! that's why you need to turn it on in advance.
    Bake for 40 minutes approximately, check if it is cooked with the usual long wooden pick that must come out dry. Times may vary from oven to oven. You can also tap the loaf on top, it should sound hollow.

    Your soda bread is now ready, let it cool down on a grid or whatever. This is the result I got:

    I suspect this bread could use a little sugar and some less salt in it. Do your experiments, people.
