Soup Recipe

    I love soup and I love making it. I put this together myself, not sure if it exists out there somewhere as an actual recipe with a name. But I just made it and it is SOOO good, so I'm gonna share.

    olive oil
    onion (any kind)
    garlic
    spinach (fresh or frozen, but not canned)
    roasted red peppers
    knorr vegetable bullion
    water
    hot curry paste
    egg noodles (medium)

    heat oil, add onion. after a minute or two, add garlic. after a minute or two, add spinach. after a minute or two, add roasted red pepper and the bullion and water.

    over medium heat, let it come to a boil. reduce heat to simmer, add curry paste and noodles. cover, simmer for about 10 minutes or until noodles are cooked.

    turn off heat, let sit for about 5 to 10 minutes.

    it's delicious.

    This sounds good! How spicy is it though? I usually go for a mild curry powder but it seems like every soup I've made recently is so bland. How much garlic did you use?

    I only make a single serving at a time, so the only measurement I go by is 2 cups of water for the bouillon. Everything else is just my preference. I like it spicy so I use nearly a full tablespoon of curry paste. For garlic, I use about a teaspoon.

    Sometimes I make it without curry but I'll use hot Italian sausages instead (char-broiled). And if I don't have roasted red peppers I'll use red kidney beans. Lots of ways to change it up!

    Leave off the bullion (yuk!) use real vegetable broth and it sounds like a fine soup! :2thumbsup:

    I love love love Knorr products but I'm going to try making my own vegetable stock, or whatever it's called.

    I'm making a vegetable stock and the smell is driving me crazy! It smells sooo good right now!

    With 1 gallon spring water, I used:

    leek
    onion
    garlic
    grape tomatoes
    carrots
    celery
    rutabaga
    fresh parsley
    dried bay leaf
    crushed black pepper
    light olive oil

    ... delicious ocean!

    It was unbelievably good. It was a very sweet stock but I used hot Italian sausage in the soup, so the two flavors blended really nicely. I could live off this soup forever.

    Tonight I'm making the first part of chicken stock / chicken soup. I'll be using BeachBall's stock recipe :D

    Made another crafty soup. ha. I amuse myself.

    I used the vegetable stock I made to cook some Kashi. After the Kashi was done I added the rest of the vegetable stock, mixed peppers (green, yellow and red), zucchini and hot curry paste.

    Yummy.
