Seafood Casserole

    Made this for my mom's bday:


    two sticks butter
    one tbl spoon unbleached, all purpose flour
    clam juice
    heavy whipping cream
    8 to 10 oz scallops
    1/2 lb of shrimp, peeled
    8 oz crab
    8 to 10 oz lobster pieces
    8 oz Monterry Jack cheese

    Crumb topping:
    8 oz Ritz crackers, crushed
    fresh thyme, finely chopped
    two tbl spoons onion, finely chopped

    Melt one tbl spoon of butter in saucepan and cook onions in butter until translucent and soft.

    Melt another stick of butter and dump in cracker and thyme mixture along with onions. Set aside.

    Preheat the oven to 400 degrees.
    Melt 1 tbl spoon of butter of in a sauce pan.
    Remove from burner and add 1 tbl spoon flour.
    Cook two minutes over burner.
    Add 2/3 cup clam juice.
    Cook to a thin sauce.
    Add two tbl spoons heavy whipping cream.
    Cook down to a rich, creamy sauce. (The frozen seafood will water it down a lot.)
    Butter a 9x13 casserole dish and toss in scallops and shrimp. Pour sauce in pan and bake 8 to 10 minutes. Spoon sauce over scallops and shrimp. Add lobster and bake 5 to 8 minutes. Spoon sauce over dish again and add crab and bake 5 minutes. Grate cheese on top and add cracker topping to top. Bake 5 to 8 minutes.
