Back in the days before we had a refrigerator, I can remember in the height of summer my mother would put the remains of the Sunday roast in brine to preserve it for sandwiches over the next couple of days. I think that she only did it with beef, but I am not quite sure.

    That is so funny.
Jane has a thing about sell by dates and I remember the day that she was worried about using some spice when we were staying with my late mother. The next day, I found out that it had been in the cupboard for more than 30 years. I never mentioned it to Jane. Ignorance is bliss.
Regarding your salt. The life of the plastic jar may determine the date, since the latest environmental regulations on food packaging requires plastics to be bio degradable. Crumbling plastic once the plasticisers had degraded could be quite a health risk.

That's likely the case! So an idea would be to pour it over in a glass or other more durable container :)

    the salt doesnt expire

but it will absorb from the atmosphere and the anti-caking agents will be less effective

in other words it will revert back to natural state which isnt the nice little crystals most people are used to

How many Chinese did you consume on average, Glen? Also: I'm looking for How Long. Was he perhaps one of them?
