I guess one hand clapping could be something along the lines of a guy jacking off and his balls are smacking against his gooch area making that clapping noise.

 

There are two elements contained within the question. One is the sound, and the other is the source of the sound. Why do you assume that the hand in question is not clapping against another hand? You understand what is meant by clapping--one open hand colliding with the other. The clapping requires only the movement of one hand. But regardless of whether both hands are moving or just one, the sound is the same.
