what's a good spring vegetarian soup? i have some carrots, parsnips and kale left in my fridge, and some lima beans, but they seem a little wintery to me. i want some soup! :sunglasse
ok well, since nobody posted anything, here's what i did. i cooked the lima beans in a little vegetarian "chicken" broth, and grated in some carrot and parsnip. i sliced 2 spring onions and added some leftover frozen mixed greens (kale and mustard, i think, the marker had worn off the label.) i seasoned it with chopped garlic and dill weed, and garnished it with whole wheat-sesame sticks and a drizzle of olive oil. quite satisfying! c'mon! who else likes soup? post your favorite soup!
