Boil 2 or 3 eggs three minutes, mix them with the red and green of the lobster, add 1 & 1/2 teaspoons full mustard, 1/2 cup melted butter, 1/2 cup vinegar, a little salt. Heat it or not. Pile a handful of greens on each plate. Top with a generous mound of seafood and arrange the avocado,egg, and tomatoes around.
